Lemon Pickle

If tangy flavours are your thing, then this one should be one of the favourites. Cut about 10 – 12 lemons into slices. Heat some oil into a pan. Add some carom seeds (ajwain), 2 teaspoons of salt and 3 teaspoons of red chilli powder. Add the lemon slices and add at least 4 tablespoons of sugar. Let it boil till you achieve a medium thick consistency. Allow it to cool and transfer in a jar. We Indians love our pickles. Pickles (called ACHAR in Hindi) have been an integral part of our meals. We have savored them with parathas, enjoyed them with plain dal rice, licked off generous amounts from the containers with pooris or sometimes just had them along with plain curd – rice.
