Lemon Curd Tart

An easy no bake lemon curd tart will jazz up your dinner tables without too much fuss. To make the tart, mix 200 gms processed crumbs of marie biscuits with 100 gms melted unsalted butter & some cinnamon powder to taste. Combine well & place in a round pan that has been generously greased with some butter. Press gently so that the mix covers the sides of the pan too. Refrigerate for 1 to 2 hours till set. To make lemon curd, mix together 3 eggs with 3/4th cup sugar & whisk in a bowl. Now heat the mix in the bowl with a double boiler method & keep stirring as you add juice of 2-3 lemons. Keep cooking till the lemon curd reaches custard like consistency, remove from flame & add 3-4 tsp unsalted butter & mix well.
