INGREDIENTS ½ cup sago pearls, soaked ½ litre whole milk A pinch saffron strands ½ teaspoon cardamom powder 3 tablespoons sugar 5 almonds, blanched 5 pistachios, shelled & blanched METHOD 1. In a small saucepan, combine milk with saffron and cardamom and place over low heat. 2. Add sago pearls, and stir well. Bring the mixture to a boil on high heat, stirring occasionally till sago pearls swell up and soften.. 3. Mix in the sugar and stir till sugar dissolves and the milk thickens. 4. Mix in the almonds and pistachios. Serve hot or chilled. (NOTE: To soak sago, transfer sago pearls to a strainer and rinse with warm water. Allow sago to drain well and transfer to a bowl.
